I LOVE leftovers and trying to decide what to do with them the next day. Fritters have to be my leftover nosh of choice though and when I had a rather large bowl of just Brussel Sprouts left over from Christmas dinner, fritters it had to be!
As usual, no measuring. Put a couple of tablespoons of plain flour in a bowl, make a hole in the middle and crack an egg into it. Slowly mix bringing the flour in from the edge. when it gets too thick add milk and water, alternatively, until the batter resembles a really thick cream.
Chop up your cooked leftover sprouts - or any other veggies for that matter, anything goes.
Chuck them in the batter mix along with a big blob of Cranberry Sauce.
Ooooooo, nice pink batter mix.
Heat some oil until very hot - if your oil is too cold the fritters will soak it all up making them stodgy.
Be patient and wait until they are cooked before trying to flip them over as they will break apart if they are not cooked enough.
Serve :)
