Red Lentil & Sweet Potato Slow Cooker Curry


This dish is very tasty, you bung all the ingredients in your slow cooker in the morning (or early afternoon) and leave it all day, then come home to a gorgeous smelling house and a delicious meal.

It also keeps well in the fridge for a couple of days and you can just zap it in the microwave to reheat.

Ok, so just chuck in the following:  I have used "mug" measurements as you can use any cup size you like - a mug size will feed three people.
  • A mug of red lentils
  • A peeled and chopped large sweet potato, or two small ones.
  • Chopped Garlic
  • Chopped Onion
  • 3 Mugs of Vegetable Stock
  • Tablespoon of Curry Powder
  • 2 Teaspoons Chilli Powder
Stir, and leave on low all day.  Half an hour before serving you can stir in some spinach leaves if you like, and leave to wilt.
Serve with brown rice, or whatever you usually eat curry with.
