Years and years ago I went to a friends for dinner, she made the most beautiful dish that she called "Greek Shepherd's Pie" It was basically mince with rice in cheese sauce on the top instead of potatoes.
This is my version, I use a bolognese type mince sauce as it seems to work better with the cheese sauce.
It is uber delicious and one of those type dinners that you can call 'womb food' - warming, cosy, comforting and moreish.
So basically, make a pan of bolognese, just the same as if you were having it with spaghetti. Add veggies if you like, and a good generous pinch of dried oregano. I have both beef and Quorn versions on the go here.
Once cooked put into an ovenproof dish. (I still cook for 5 even though sometimes there are only 2 of us!! - still, it goes in the freezer to make another meal at a later date :) )
Pop your rice on to boil according to the packet instructions, and meanwhile make a cheese sauce (you can use my Perfect Cheese Sauce recipe if you like, it works well)
Drain the rice very well and dump it in the prepared cheese sauce.
Mix it up well - hmmmmm cheesey porridge, nice!
Layer the cheese rice mix on top of the bolognese, sprinkle with grated cheese, dried breadcrumbs and dried oregano.
Bake at Gas 6 for about 30 mins, until bubbling and golden.
Dig in...
Nom nom.
Oh wow...we were going to have normal shepherd's pie tonight, but I think we'll be trying this instead!
