This is one of my favourites, it is lovely hot from the oven, but also great cold, in a packed lunch.
Mixed Veg Noodle Bake.
You will need:
- Pack of super noodles (any flavour, most are suitable for vegetarians, but do check)
- Mixed Veg
- 4 Eggs
- Splash of milk
- Salt & Pepper
- Dried Herbs of your choice
What you do:
- Cook a good couple of handfuls of veggies and the noodles as directed on the packets. (I use super noodles as they have a nice flavour and stop it being too bland, but you can use normal noodles and add your own herbs & spices.)
- Beat the eggs with a splash of milk, seasoning and a good sprinkle of your choice of dried herbs - I use mint, I like mint.
- Drain the veg and noodles and leave to cool a little (if you put them straight into your egg mixture you run the risk of it scrambling.
- Put the cooled veg and noodles in with the egg mix and stir thoroughly.
- Pour into a flan dish.
- Sprinkle with a little mature cheddar and pop into the oven.
- Gas Mark 6 for about 30 mins, or until the middle stops wobbling.
- Slice and serve with a big blob of salad cream ({not sure why but it goes really well with salad cream :) )
